Just bought the phone used, and it came to me as an unlocked phone. It
was originally a T-mobil phone and I happen to use T-mobil on a Pay as
you go plan.
Question; The updater software requires that I inform it as to what
provider I use, and it does say something in the instructions about
reestablishing a "Subsidy lock" on the phone. Does this mean that if I
update the software the phone will be locked to T-mobil again? Inquiring
minds want to know...

That's right.
If you have the subsidy password you can unlock it again.
Just pick one that says "unlocked" and you'll be OK.
