I had a Motorola, not mine, so I didn't want to "sync" with my email.
I wanted to copy the contacts to the replacement Nokia, also not mine.
I brought up both programs, linked to their respective phones via
Bluetooth, and looked at the available formats.

You can synchronize a compatible Nokia phone with the following PC PIM
applications:
Microsoft Outlook 2000, 2002, 2003 and 2007
Microsoft Outlook Express / Windows Address Book
Microsoft Windows Vista Contacts
Lotus Notes 5.x, 6.x and 7.0
Lotus Organizer 5.x and 6.x
At the time of this transfer, I thought it was odd that a readily
accessible database or flat file weren't in the Nokia options, but Nokia
isn't working with data, it's synching with an application. Later, I
realized that reduces the flexibility.
MPT lets you bring up two panels in the Phonebook. On the left is the
database of your choice from above, on the right is the phone contents.
You can sync, drag, modify, or delete on either side, without immediate
impact on the other side. (screen shot on page 44 of the guide.)
When MPT does sync, the rules are clear, and it prompts for conflict
resolution.
Nokia has no individual contact flexibility that I can find. The sync has
rules, but I don't think they apply the way that I want them to.
