If I am in an Extended Area, can I still call other Verizon phones
without the minutes counting?
Also, I have Americas Choice 2. I'm not supposed to pay roaming charges,
but my phone is showing "roaming." Is this just what the phone does
when in a non-native Verizon area.

"The best way to determine service availability for IN Calling is to
pay attention to your handset's roaming indicator. With either plan,
if your roam indicator is on or flashing, IN Calling does not apply."

No. "In Calling" applies only when both phones are in native
Verizon service areas.

In the case of my VX-8350 phones, they display "Extended Network"
on the main screen if I am in an Extended Network area and
"Roaming" if we are really in a roaming area. However, it will
display "Roaming" on the screen that appears DURING a call when
we are in Extended Network areas.
Since you have America's Choice 2, you don't care if the phone
thinks it is roaming. With your calling plan you cannot incur
roaming charges.
